Cold pasta salad

Pasta salad is the perfect dish for summer, when you don't want to give up pasta but are looking for something fresh and light.

Ingredients

  • 280 g macaroni rigati
  • 200 g mozzarella cherries
  • 100 g boiled green beans
  • 100 g yellow pepper
  • 100 g red pepper
  • 40 g rocket
  • 1 teaspoon CANNAMELA basil leaves
  • 30 g extra virgin olive oil
  • salt to taste

Preparation

Boil the pasta in plenty of salted water, drain when al dente and run under cold running water to stop the cooking process.

Drain the pasta again. Drizzle with a tablespoon of oil and stir.

Clean and wash the vegetables.

Finely chop the rocket.

Cut the peppers into small pieces, then brown for 6/7 min in a pan with 1 tablespoon of oil.

Remove from the heat, season with salt, then add 1 teaspoon of CANNAMELA basil leaves.

Off the heat, add the peppers to the pasta.

Complete with chopped green beans, sliced mozzarella cherries and finely chopped rocket.

Stir, season again with 1 tablespoon oil and leave to stand for about ten minutes before serving.
